It is the perfect accompaniment or side salad. You can play around with different colours of beetroot, or as a replacement you can use daikon radish, carrot or green apple. Sprinkle some pinenuts or hazelnuts on top for extra crunch.<\/p>\n<p>&nbsp;<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-medium wp-image-2766\" src=\"https:\/\/endota.com\/nz\/wp-content\/uploads\/2021\/08\/image1-15-1680x2240-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/> <img decoding=\"async\" class=\"alignnone size-medium wp-image-2765\" src=\"https:\/\/endota.com\/nz\/wp-content\/uploads\/2021\/08\/image2-31-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/> <img decoding=\"async\" class=\"alignnone size-medium wp-image-2764\" src=\"https:\/\/endota.com\/nz\/wp-content\/uploads\/2021\/08\/image1-16-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" \/><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n3 medium sized beetroots<br \/>\n2 figs<br \/>\n5 sprigs italian parsley<\/p>\n<p><strong>Dressing<\/strong><br \/>\nJuice of 1 orange<br \/>\n1 tbsp wholegrain mustard<br \/>\n1\/4 cup extra virgin olive oil<br \/>\n1 tbsp coconut sugar<br \/>\n1\/4 cup apple cider vinegar<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Peel beetroot, and use mandolin (or sharp knife) to slice beetroots very thinly.<\/p>\n<p>Dehull figs and slice thinly using mandolin (or sharp knife).<\/p>\n<p>Arrange on a platter, and sprinkle leaves of italian parsley on top.<\/p>\n<p>Dressing<br \/>\nPlace all ingredients into a small blender.
