This recipe is lusciously nourishing, just as porridge should be.&#8221;\u00a0&#8211; Eleanor Ozich from <a href=\"http:\/\/www.eleanorozich.com\">Petite Kitchen<\/a><\/p>\n<p><strong>TOASTED QUINOA PORRIDGE WITH ALMOND BUTTER AND BERRIES<\/strong><br \/>\n<strong>Serves 2<\/strong><\/p>\n<p>1 cup white quinoa<br \/>\n3 cups cashew milk*<br \/>\n3 Tbsp almond butter<br \/>\n2 tsp cinnamon<br \/>\n2 tsp pure vanilla extract<br \/>\nA pinch of sea salt<br \/>\n<em>*Almond, coconut or regular milk works fine also.<\/em><\/p>\n<p><strong>To serve<\/strong><br \/>\nA handful of roughly chopped almonds<br \/>\nSliced kiwifruit<br \/>\nFresh or frozen berries, thawed<br \/>\nPure maple syrup to sweeten (optional)<\/p>\n<p><strong>1.<\/strong>\u00a0In a saucepan, combine the quinoa, cashew milk, almond butter, cinnamon, vanilla, and sea salt, and bring to a gentle boil.<\/p>\n<p><strong>2.<\/strong>\u00a0Reduce the heat to low, and simmer, whilst stirring occasionally, until creamy and thick, about 15 -20 minutes.<\/p>\n<p><strong>3.<\/strong>\u00a0Remove from heat, and pour in to serving bowls.
