Roasting the vegetable brings out its natural sweetness, while the caper, mustard and herb dressing creates a complex balance of harmonious flavours. It\u2019s a simple recipe, but one you\u2019ll find, that suits many occasions.<\/p>\n<p>ROASTED CAULIFLOWER SALAD WITH CAPER HERB DRESSING<br \/>\nServes 2 as a light meal or 4 as a side<\/p>\n<p>For Roasting<br \/>\n\u00bd head cauliflower<br \/>\n2 red capsicums<br \/>\nExtra virgin olive oil<\/p>\n<p>Caper Herb Dressing<br \/>\n1\/3 cup extra-virgin olive oil<br \/>\n\u00bc cup lemon juice<br \/>\n1 heaped tsp Dijon mustard<br \/>\n1 Tbsp natural yoghurt<br \/>\n1 Tbsp finely chopped mint<br \/>\n1 Tbsp finely chopped parsley<br \/>\n1 tsp honey or maple<br \/>\n\u00bc cup capers, roughly chopped<br \/>\n1 spring onion, finely sliced<\/p>\n<p>1. Preheat the oven to 180C, and line a tray with baking paper.<\/p>\n<p>2. Chop the cauliflower into small equal-sized florets, and cut the capsicum into 1cm thick slices. Place in a bowl, drizzle in extra virgin olive oil, and toss until lightly coated.<\/p>\n<p>3. Transfer the vegetables to the prepared tray, and season with sea salt and pepper. Roast for 20-25 minutes, or until lightly browned on the edges.<\/p>\n<p>4. Remove from the oven and allow to cool slightly while you make the dressing.<\/p>\n<p>5.
